I ran out of Shaoxing mid-recipe on a Thursday and had to make do with a splash of dry sherry. It worked - but it wasn’t right, the way “worked” and “right” are sometimes different things in a pan. I restocked. The bottle showed up in a red-and-white box that looked too nice for a thing that is supposed to live between the soy sauce and the oyster sauce, and I took a picture of it on the counter before I opened it. Not everything in the kitchen is a meal. Some of it is just the ingredients for the meals.
