My husband likes it when I make this plate because it has the thing he likes (salmon) next to the thing I like (a lot of potatoes). It’s one of the fairest dinners in our rotation. A Thursday. I’d been at the computer all day and wanted the oven doing the work, which salmon and fingerlings and asparagus will happily do if you ignore them long enough. We ate at the counter because the table had mail on it.
